Create a CLI UI as oppose to console logging #374

We should start using something like this: https://spectreconsole.net/

As oppose to logging what we normally log to files, into the console stream. On Docker, this creates very large log files that are out of our control, and the CLI UIs would be much more useable than stream of logs.
