test(redis): use non-default issuerRef.kind in custom issuerRef test

Address review feedback from coderabbitai on tests/tls-certificate_test.yaml:48: Switch the fixture from kind: ClusterIssuer (the default) to kind: Issuer and assert both name and kind fields, so the test catches regressions where the chart ignores user-supplied issuerRef.kind.
