You can edit a setf-able symbol with C-c E (sly-edit-value or slime-edit-value): it pops up a new buffer with the current value of the symbol. Edit it and press C-c C-c to confirm the changes.
You can also edit outputs (e.g. strings or s-exps). In SLY, you would press p (sly-button-pretty-print): it displays the output in a new buffer, which is read-only by default. Make it writable with C-x C-q (read-only-mode) to edit the value.
