Add Redis versions to Server Requirements #11030

Redis 7.2 was just released yesterday and elevated to stable status (https://redis.io/download/).

It's unclear if any of the Potentially Breaking / Behavior Changes impact us, but there's been one (inadvertent) upgrade + failure report: https://help.nextcloud.com/t/nextcloud-breaks-after-upgrading-to-redis-7-2/168291/2.

We should probably make sure our tests are happening against a reasonable version + consider documenting the ones we already test against/recommend here:

    I updated the redis testing image today which should now run all tests in nextcloud/server against redis 7.2. so far nothing seems to break... So we could up the version in the docs due to this.

    Best as I can tell, all redis testing in server uses our continuous-integration-redis image, which is still v7.0.12 based (EoS incidentally).

    For anyone ending here, the AIO seems to now use 8.6.1 and it gets regularly updated:

    AIO currently uses redis 8.6.3 and everything seems to work fine. I guess doucmenting the redis requirements would generally be a good idea. However someone would need to maintain and update the values and used redis versions in our CI tests regularly...

    As the other entries :)
    I guess having them all in the same table in https://docs.nextcloud.com/server/latest/admin_manual/installation/system_requirements.html#server would already be nice and easier to update
