chore(deps): bump go to 1.26 and update all dependencies - #252

Update go directive in go.mod, CI workflows (ci.yml, release.yml), and Dockerfile from 1.25 to 1.26. Run `go get -u ./...` and `go mod vendor` to bump all direct and transitive deps to their latest versions. Notable bumps: certmagic 0.25.0 -> 0.25.3, go-pkgz/lgr 0.12.1 -> 0.12.3, go-pkgz/rest 1.20.4 -> 1.21.0, golang.org/x/crypto 0.45.0 -> 0.51.0, miekg/dns 1.1.68 -> 1.1.72, prometheus client_golang stays at 1.23.2.

Test_MainWithPluginis flaky undergo test -race -count>1due to a pre-existing race in lgr's globalSetup()(file-provider goroutine from iteration N reads the globaldefwhile iteration N+1 ofmain()overwrites it). The race reproduces on master too, CI runs-count=1without-raceso it's green, and a proper fix needs either a test restructure or lgr-side synchronization. Left for a follow-up.
